Vegan Breakfast Burrito with Tofu Scramble

  1. Ingredients:

  • 1 block of firm tofu
  • 1 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1 tablespoon oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup diced tomato
  • 4-6 large tortillas
  • 1/2 cup vegan shredded cheese
  • 1/4 cup diced avocado
  • 1/4 cup salsa

Instructions:

  1. Drain the tofu and press out as much water as possible. Crumble the tofu into small pieces using your hands or a fork.
  2. In a small bowl, mix together the turmeric, cumin, and salt.
  3. Heat a skillet over medium-high heat and add the oil.
  4. Add the diced onion and bell pepper and cook for 2-3 minutes, or until softened.
  5. Add the crumbled tofu and the spice mixture, and cook for another 2-3 minutes, or until the tofu is heated through and the spices are fragrant.
  6. Add the diced tomato and cook for another 1-2 minutes, or until the tomato is softened.
  7. Warm the tortillas in the microwave or on a skillet.
  8. To assemble the burritos, place a tortilla on a plate, add a few spoonfuls of the tofu scramble, a sprinkle of vegan cheese, diced avocado, and salsa.
  9. Roll up the burrito, tucking in the sides as you go.
  10. Repeat until all the burritos are assembled.
  11. Serve the burritos warm, and enjoy!
