Vegan Blueberry Oatmeal Pancakes

 Ingredients:

  • 1 cup rolled oats
  • 1 cup flour (all-purpose or whole wheat)
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup plant-based milk
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries (fresh or frozen)

Instructions:

  1. In a blender or food processor, pulse the oats until they become a fine powder.
  2. In a large mixing bowl, combine the oat flour, all-purpose flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix together the plant-based milk, flax egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Heat a non-stick skillet or griddle over medium-high heat. Grease with oil or vegan butter if needed.
  7. Use a ladle or measuring cup to pour the batter onto the skillet/griddle, making sure to leave enough space between pancakes.
  8. Cook until bubbles form on the surface of the pancake and the edges start to look set, then flip and cook for another 2-3 minutes.
  9. Repeat until all the batter is used up.
  10. Serve the pancakes warm, topped with fresh blueberries, maple syrup, and vegan butter if desired.
