Ingredients:
- 1 block of firm tofu
- 1 teaspoon turmeric
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1 tablespoon oil
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/4 cup diced tomato
- 4-6 large tortillas
- 1/2 cup vegan shredded cheese
- 1/4 cup diced avocado
- 1/4 cup salsa
Instructions:
- Drain the tofu and press out as much water as possible. Crumble the tofu into small pieces using your hands or a fork.
- In a small bowl, mix together the turmeric, cumin, and salt.
- Heat a skillet over medium-high heat and add the oil.
- Add the diced onion and bell pepper and cook for 2-3 minutes, or until softened.
- Add the crumbled tofu and the spice mixture, and cook for another 2-3 minutes, or until the tofu is heated through and the spices are fragrant.
- Add the diced tomato and cook for another 1-2 minutes, or until the tomato is softened.
- Warm the tortillas in the microwave or on a skillet.
- To assemble the burritos, place a tortilla on a plate, add a few spoonfuls of the tofu scramble, a sprinkle of vegan cheese, diced avocado, and salsa.
- Roll up the burrito, tucking in the sides as you go.
- Repeat until all the burritos are assembled.
- Serve the burritos warm, and enjoy!
